Frietjes (Paleo/Primal)

Frietjes are what we call fried up things over here in the Netherlands, namely French fries. Well, since going Paleo - or Primal I have tried frying up different things. Surprisingly beets and celery root are not bad, in fact, they are pretty dang good. I also really like to fry up some plantain chips. I hardly miss the old white potato. I don't force my children to do the Paleo/Primal thing with me though because I want them to actually eat something and I don't care for their whining... so I keep some of their food on hand.  Tonight I fried up celery root fries for myself and I did that with my wok and used a combination of leftover cooking fat from bratwurst and coconut oil. They do take a while longer to cook and you have to move them around a bit - easier with the deep fryer, but still they tasted great and even the youngest one ate them :)  The others wouldn't eat them though so I fried up the regular potato fries for them. Maple Cinnamon Honey Butter

One of my weaknesses - is honey butter. I love it with toast, or as a frosting on cake - it's no wonder - what with my love for cinnamon rolls that I would love cinnamon flavored honey butter. First time I made honey butter I used a recipe from Make a Mix Cookery that had a lot of honey in it. So it's no wonder I loved it. But since then, I make it with quite a lot less honey and I found that it really pops when you add other flavors to it. I use a combination of some of my favorite spices and liquid extracts. I don't really measure anything - this is kind of a taste and adjust to taste kind of recipe. First, use biological butter - or in other words butter from grass fed cows (if possible). Also, we are lucky that in Europe the laws regarding honey are that it does not need to be pasteurized - so it's very easy to find raw honey here. Chili Chili Bang Bang (Paleo/Primal)

So, I've been trying out a lot of different chili recipes and this last one I made was a hand written recipe from my mother in law - I have no idea where she got it - but it rocks! Funny thing is - I told the kids we were having chili and they came up with chili chili bang bang - yeah, so we've been watching some old movies and I like the name - just sticks - and they were even singing the little ditty to the chili chili bang bang. Kids are so funny. Here is the recipe - which I will most likely share with my brother because he hates onions - and there are no onions in this recipe and because it's primal (paleo) there are no beans in it either!  I also like it because it's not your typical chili recipe. Maple Chocolate Frosty Ice Cream Paleo/Primal

I don't know why I felt like making ice cream on such a cold day, I just did... and I'm so glad about it, too. But, I'm gonna wait till a warmer day to repeat this delicious concoction! 400ml whipping cream ¾ cup milk ¾ cup grade A 100% real maple syrup ⅛ cup Dutch-processed cocoa powder 2 teaspoons vanilla extract Dash cinnamon 1 small ripe banana, pureed Warm 200ml whipping cream in microwave or on stove top. Mix in cocoa powder till no lumps and smooth. Remove from stove top - do not allow it to boil. Mix in remaining ingredients. Pour into bowl of ice cream maker and follow manufacturer’s instructions. Freeze in airtight container until ready to serve. The consistency of this ice cream is smooth like super soft serve. Freeze for 3 hours to get it to firm but soft consistency. The flavor of this ice cream is oh so yummy - really reminds me of the chocolate frosty from Wendy’s restaurants (fast food) in the U.S. You can taste a hint of the banana but all the flavors

Someone left a comment requesting this recipe. So I looked it up in my cookbook "Simple Vegetarian Recipes" and found that I made a big ole typo. So, it's Cauliflower Roulade . Oops, my bad. Serves 6 1 small cauliflower, divide into florets 4 eggs, separated 1/4 cup Cheddar cheese, divided ( I used Gouda ) 1/4 cup cottage cheese large pinch grated nutmeg 1/2 tsp mustard powder salt and pepper FILLING: 1 bunch watercress, trimmed ( I used spinach ) 1/4 cup butter 1/4 cup all-purpose flour ( I used coconut flour... but i'd go with something like almond flour or arrow root powder next time - your choice thickener ) 3/4 cup plain yogurt 1/4 cup Cheddar cheese, grated 1/4 cup cottage cheese 1. Line a jelly roll pan with baking parchment 2. Steam the cauliflower until just tender. Drain and run cold water on it to prevent further cooking. Place the cauliflower in a food processor and chop finely. 3. Beat egg yolks, the stir in the cauliflower, 1/2 c
