Chickpea Burrito's (Vegan)

Image
Yesterday I decided to share my week's menu and I noticed that one of my favorite meals: Chickpea Burrito's was not only - not on my blog - it's also not to be found online - anymore. I found the original recipe via Vegweb.com and now when I go back to that site to search for it - I can't find it. It's as if the original submitter of the recipe, took it down.  I don't know why - it's delicious - and a great alternative to black bean or pinto bean burrito's. The original recipes was submitted by user kelly.elly and called it Refried Garbanzo Beans with Sauted Veggies Burrito . You can see why I shortened the title. I had it added at one time in my WW recipes list and it's about 4 PTS. per burrito (but I used lots less olive oil then - and had to steam my veggies instead of saute them in oil). The original recipes says it serves 3.... but from my experience it serves about 8. So, I will give my version of the recipe - which is almost exact - ju...

Three Cheese and Vegetable Grilled Panini

Image
A couple weeks ago, my slow cooker spent all day simmering beef for my French dip au jus. It was well worth it. I saw several recipes online recommending the use of Boursin cheese. They sell it here. I had never bought it before and probably wouldn't buy it again. It wasn't bad, it's just that it's a soft cheese with garlic and herbs that is over priced. There are a lot of other brands of soft cheese with garlic and herbs that I can get for less. And if I was gonna buy a name brand expensive cheese again - I'd defintitely go with Paturain. I love their cheeses. Anyway, back in the day when I lived in the states, I used to go to this sandwich shop called Quizno's. They had the best French dip and I think it had a bit of cheese on it as well. I loved it. I would go there quite regularly. Then one day, I walked in and it was off the menu. The entire menu had changed. And the guy working there said yeah, that's what makes Quizno's so special. They cha...

Diner Favorites - Potatoes O'Brien and French Toast

Image
I love eating "breakfast" for dinner. I love to eat at Diners. My favorite Diner that I miss the most is 5 & Diner. They had them all over Phoenix. I use to always get an Oreo milkshake and they would give you the extras in that tin cup. And I would order hashbrowns, eggs and toast. Simple but oh so good. I recently found out that my grandmother also loved Oreo Blizzards. So that is something we have in common. She died recently and this was listed in the handout at the funeral. Next time I'm in the states I'm totally going over to DQ and getting myself an Oreo Blizzard in her honor... and I'll be sure and stop by a diner and eat all my favorites as well. So, occasionally for dinner I make a special "diner night" and I often serve pancakes and hashbrowns, egg omelets or egg "mc" muffins but this time I served Potatoes O'Brien and French Toast. I've read that there are hundreds of different variations of Potatoes O'Brien. I ...

Mediterranean-style Cashew-cucumber Dip page 66 Veganomicon (V-con) Recipe Review - and a new way to enjoy it my way! This is a dairy-free variation of the classic Greek cucumber yogurt dip tzatziki and it is oh so good. First I made it and paired it with Greek-style Tomato-zucchini Fritters with Fresh herbs page 52 V-con . That was good. But then I found a new and even better way to enjoy this most delicious dip. I paired it with fried eggplant - which is something I've been eating together with hummus and tortillas a lot. But now I've found a really good bread - which isn't too hard to find here in the Netherlands - from of all places, the Lidl. They call it Sunflower Panini bread - although it's quite big and very filling. So I make a batch of the Cashew-cucumber dip, then I slice and fry my eggplant and then I eat this all week long for lunch with my bag of Sunflower Panini bread - it's enjoyable every time - and to mix it up I just eat different fresh fruit wit...

ZUCCHINI CINNAMON ROLLS A while back I made Pumpkin Cinnamon Rolls and they were delicious... I was sitting here this morning trying to figure out what to do with my zucchini crop thumbing through my cookbook when I see the cinnamon rolls... I thought - if I can do those with pumpkin puree - why not zucchini puree? So I emailed the recipe to my sister in law because she has tons of fresh zucchini in her garden and I thought she would enjoy a different kind of way to use up the zucchini. Then I thought - what the heck - I'm gonna try it out too. So I scrap the idea of making zucchini enchiladas for dinner - we just ate leftovers... and today I made the Zucchini Cinnamon Rolls. And... I'm happy to report that they were delicious... I even had a friend - Catharina help me and she was very skeptical - but she loved 'em. And my new friend Vanessa even called me something of a Goddess. So - they've passed the test! We made them two ways - one just plain cinnamon rolls - the o...
