Chocolate and Peanut Butter Cookies with Oreo Crumbles - Yum!

Image
This morning my son wanted to bake peanut butter chocolate chip cookies from the dough you buy at the store but I said, let's just look up a recipe in a cookbook and if we have all the ingredients then we can make it. So, the cookbook I looked in first is called Chocolate Never Faileth. It's a book my mom got for me and it's probably from the Deseret Book store with a name like that. Very Mormon sounding. Anyway, we found a recipe and then tweeked it a bunch. Then, after the first batch I got this awfully good idea to add Oreo cookie pieces to the batter and then I baked a batch of those and they were amazing! So, I'm going to include it here so I can find it again and bake it again. Yum. 😋 Click here for Print Version. Repertoire 2013

Image
owl cake for my 34th birthday! The last couple of years I have done my annual New Year's Resolutions... I have looked back over some of them and found that some times I did well, but mostly not. This year I wanted to go back and do a Repertoire . It's something that my friend KP started. She put together a poster of all kinds of fun things to do in the year. Some challenges - but mostly just trying out something new and fun.  I've decided to do this in 2013. 1. I got a really cool "cook book" for my birthday this year - one that had been on my wish list for some time... the Juice Master's Funky Fresh Juice Book... in 2013 - try every recipe in the book - even the ones with garlic, tomato, and asparagus - this is my Funky Challenge! 2. Paint my toe nails once a month in a fun, glittery - colorful way. Paint Kailea's, Ella's and Siembra's toe nails the same way - it will be our girls thing once a month! This is my Cool Mom Challenge!...

Baking cake is NOT much fun

Image
Cake . I don't know why I keep doing it.  I have noticed the last 4 or 5 cakes that I baked... I didn't really enjoy it . It being - the baking.  It's just a lot of work and I really hate the clean up part of it. I feel like I'm on my feet all day and my cakes don't really turn out all that pretty. I mean, they are okay. Not the ugliest things but I'm much better at baking cinnamon rolls - sweet rolls. In fact, I'd much rather be baking sweet rolls - because I enjoy them so much more than I enjoy cake. And really, cleaning up after baking sweet rolls is so much faster. For one, I almost always bake my sweet rolls on a cookie sheet lined with parchment paper. So then I just throw that away - and I'm done! The other bowls, rolling pin and few other things get cleaned up along the way - while the dough is rising, etc...   Cake is just so much work - and in my opinion - not that rewarding for all the work put into it. I'd much rather m...

The BEST REAL Peanut Butter Cookies

Image
Gooey in the middle and crispy on the outside, just the way a cookie should be! I discovered this recipe some years ago. I used to bake it nearly every month, that's how good it is. I've tried many, many peanut butter cookie recipes and this is the best by far! You don't really need to add chocolate chips... but I just happen to get a bag full of goodies from a lady who bought all these baking supplies - American style baking supplies - from the BX, and the stuff she didn't use up before she moved back to the U.S. - was gifted to me. So the best way to show my gratitude - was to use it up! There was a half open bag of white chocolate chips and a half open bag of semi-sweet chocolate chips... Did I mention... I love this recipe for peanut butter cookies and I threw in the chocolate chips as well. It was very yummy. This recipe is originally vegan believe it or not. You don't really need eggs in most baked goods anyway. But then I went and poured in all t...

A Birthday Surprise

Image
I was invited to a birthday lunch surprise... and I managed to keep a secret! Boo-yah! Yeah, everyone was actually surprised that I kept a secret - but I can keep secrets when they are important like that :) My friend and her family often eat gluten free - and they try to eat as organically as they can afford to because not only is it good for you, they also do it for her young son that is overcoming autism. So I asked if I could bake something and bring it to the party and they said Yes! Yippee. This comes from " At Tiffany's Table " by Tiffany Perez. Tiffany suffered from Crohn's Disease and healed her illness with food! Ultimately, she gave up refined sugar completely. She does eat desserts though - made with honey or maple syrup. She mainly uses raw honey and raw milk. She also bakes with her own freshly ground wheat. I'm looking forward to trying many recipes in this book (I'll just have to adapt them to my circumstances - i.e. regular milk, regula...

White Chocolate Blondie Cupcakes

Image
Do you like brownies? Me, too. Do you like white chocolate? Me, too. I've had this cake in the original dark chocolate brownie form and in the white chocolate blondie form... and I liked it way better in white chocolate blondie form. Oh my gosh, it is so good... like fudge. White fudge from heaven! I might even dare say - that's it's better than Death by Chocolate cake... it's Death by White Chocolate and by golly it's GOOD! My good friend Cat likes to bake - lucky me. She baked me the original for my birthday - it had a chocolate ganache topping - very heavy cake - Punk Papa ate most of it. It was just so chocolatey, that I couldn't handle it... but the white chocolate - oh my - I couldn't stop. So, if you are going to bake these in cake form or cupcakes - do share - or else - don't blame me if you gain 5 pounds ;) Top any way you like. Cat made them for me topped with cocoa-frosting. She told me her recipe from memory (included below) - ...

Saffron-infused Carrot Cake (Grain-free) SHF #73

Image
I have participated in a few Sugar High Fridays so I thought by now that I was kind of a professional and could pull anything off. Not so my friends. In Sugar High Friday #73 the challenge is a challenge indeed. Zoe of Z's Cup of Tea challenges all to make a "grain-free" dessert. Side note: Jennifer of The Domestic Goddess started Sugar High Friday - a blogging extravaganza - an excuse to bake your favorite dessert around a certain theme. It's also fun to participate each time because you meet other foodies and get to read new blogs you might not have known about. Z's Cup of Tea is new to me. But I've been following her blog since the SHF #72 - trifles. And I find it very interesting that she makes so many foods grain free, sugar free, and so forth. So back to the challenge - make a "grain-free" dessert. Naturally, I thought, oh that's easy - just make ice cream or something like that. But I figure, since she provided a list of suggesti...

Fudge and Marshmallow Topped Cookies

Image
I bought this small recipe magazine at the checkout by my local grocery store back in 2003. It’s by Gold Medal (flour). This is another thing I miss about living in the U.S. I miss those cute little recipe books that you can thumb through while waiting your turn to check out. This book has lots of festive ideas for the holidays. I’ve made this one a few times. I’ve been thinking, I could easily top any of my favorite cookies with this marshmallow and fudge frosting... maybe even cupcakes... and sweet rolls! I think it would go fantastic with PB Criss Cross cookies or pumpkin chocolate chip cookies or Snickerdoodles! Gold Medal uses cocoa cookies - I made mine with a pumpkin variation of this recipe - adapted... I think I just used 3/4 cup pumpkin puree in place of the butter and 2 extra tablespoons flour in place of the cocoa. I put some cinnamon in as well - about 1/2 teaspoon I think and that worked pretty good. This is also one of those recipes that the kids can help out with... my...

Sergeant York's Cookies

Image
So, good news - my brother who had spent the last year or so in Afganistan away from his wife and little girls - and a few years before that in Iraq... made Sergeant and I am so happy for him - he deserves it and also because that means - he gets a bigger paycheck! With good news like that I felt like making some cookies - specifically his cookies. My brother was always baking these cookies growing up - almost every Sunday night and we couldn't stop eating them... which is why they always seemed to disappear. He actually calls them: Vanishing Oatmeal *Chocolate Chip* Cookies. One time I ate so many of them... well, maybe that isn't the right story to tell... the point is that these are addicting - because they are so SO so good. Here is Sergeant York's cookies - in his own words he says “This is the recipe I use for oatmeal cookies. It actually calls for raisins, but I use chocolate chips instead, cause I'm not a big fan of raisins, and chocolate is always good...

The Kids Cook Mondays - Pizza Roll-ups

Image
Foodista.com is sponsoring The Kids Cook Mondays recipe contest. This has inspired me to let Kailea help out a bit more in the kitchen. Of course, with a contest like that they are looking for new recipes - and Kailea wants to help but her idea of helping is choosing the meals. Her favorite things to eat are as follows: french fries, noodles, pancakes and...  french fries. So, that means I have to come up with the ideas - let her help - and hope she eats the end result. Since we've been baking a lot of sweet rolls - and since I already like pizza and calzones - thought we would combine the two ideas into one. So we made our regular pizza dough, rolled it out - spread it with our favorite sauce and toppings. Rolled it, cut it, baked it. And what we ended with were mini pizza rolls. Tastey little treats - that made for a nice meal paired with salad, and apple wedges for the kids. The recipe I use for dough is quite good. It comes from Irma S. Rombauer's Joy of Cooking Vege...

Strawberry Blue Chocolate Cake

Image
My very good friend had a birthday - I was asked to bake the cake. I did and it turned out alright - so happy about that. I posted it in my other blog - my cake blog - never the same cake twice . I'd like to repost it here as well. The photos turned out excellent - thanks Mark hug and kisses and good night :) ~~~~~~~~ A very awesome friend of mine asked me to make her a birthday cake. Okay, sure. What do you like? She says chocolate cake - maybe with cherry pie filling and strawberry frosting. Okay, sure. What color do you like? She says blue. Okay, so I think to myself a cherry and strawberry cake colored blue. Should be easy. Baking can be easy - if you follow the rules. Cake and decorating cakes has one simple rule: patience! I did not possess a lot of that last night. I wanted to hurry up and finish the cake. And because of that, I ended up making too much frosting and the tint of the frosting was just not right on. Also, I filled and frosted it too soon. It's not g...

Easy Strawberry Buttercream Frosting & Cooking Conversions

A friend of mine came over this morning so I could help her with making Strawberry Buttercream Frosting. No problem. Let's look online. So I do a search and almost everything I find has actual strawberries in it. Which, I admit, sounds so delicious. But her client that she is making it for requested strawberry flavored buttercream frosting. They do not want actual strawberry bits in it. I don't know why - it doesn't make any sense to me. So I saw some recipes that asked for frozen thawed strawberries and then to just use the juice. And another recipe said to use seedless strawberry jam. I am not even sure if I have ever seen seedless strawberry jam in these parts at least. So then I remembered a recipe from one of my books - and I have adapted it to work for this client's wants. I give you Easy Strawberry Buttercream Frosting . Enjoy. 1/4 cup (55 grams) Crisco 1/4 cup (57 grams) Butter or (55 grams) margarine 1 3/4 to 2 cups (228 to 260 grams) powdered sugar 4 ...
