The Very Best Oatmeal Chocolate Chip Cookies (aka Sergeant York's Cookies)

 I decided to make some oatmeal cookies, and even though I had a copy of the best oatmeal chocolate chips cookies already, I tried a different recipe and they were so-so... just okay.

So, I searched my blog for my old standby Sergeant York cookies, which he (my brother) calls Vanishing Oatmeal *Chocolate Chip* Cookies and baked them first thing this morning.

And it really is The Very Best Oatmeal Chocolate Chip Cookies recipe on the web - in my humble opinion.

Here is a tip, put the butter out the night before so it's soft and ready to cream together with the sugar.

Next morning, heat the oven to 350 to get it warmed and ready to bake as soon as possible.

Then, cut a large parchment sheet of paper for your baking tray.

Okay, great - now we can blend everything up in the Kitchen Aid and bring it together quickly.

I may be a boredom baker - but I do things as quickly and efficiently as possible these days.

INGREDIENTS

  • 1 cup (2 sticks) salted butter, softened
  • 1 cup firmly packed brown sugar
  • 1/2 cup granulated white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 + 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1 heaping tsp ground cinnamon
  • 1/2 tsp salt
  • 3 cups of quick cooking oats
  • 1 cup of milk chocolate chips (plus extra if desired)
DIRECTIONS
  1. Heat oven to 350*F
  2. Beat butter and sugars till creamy
  3. Add eggs and vanilla; beat well
  4. Add flour, baking soda, cinnamon and salt. Mix well.
  5. Stir in oats and lastly chocolate chips; and mix well.
  6. Using a cookie scoop, evenly scoop out dough in rounded portions for your baking sheet (which has a parchment paper on it already). Set 2 inches apart.
  7. Bake 12 minutes
  8. Remove from the oven, and let cool 10 minutes on the baking sheet, then remove to the counter top to continue cooling. 
  9. Repeat steps 6-8 until the batter is used up. 
Makes about 36 cookies. And this step is vital - while the last batch of cookies are baking, clean up!

I enjoy cookies so much more in a clean kitchen. 
When the cookies are all done baking and cooling, put them away in a cookie jar or plastic bag so you can share them and enjoy them longer. Then, just crumple up that parchment paper and throw it away. Easiest clean up ever!
