Chocolate and Peanut Butter Cookies with Oreo Crumbles - Yum!

 This morning my son wanted to bake peanut butter chocolate chip cookies from the dough you buy at the store but I said, let's just look up a recipe in a cookbook and if we have all the ingredients then we can make it. So, the cookbook I looked in first is called Chocolate Never Faileth. It's a book my mom got for me and it's probably from the Deseret Book store with a name like that. Very Mormon sounding. Anyway, we found a recipe and then tweeked it a bunch. Then, after the first batch I got this awfully good idea to add Oreo cookie pieces to the batter and then I baked a batch of those and they were amazing! I had about 400 pins in my crafty stuff/crochet board so I've been doing some reorganizing. White Chocolate Oreo Cookie Spread

There are gonna have to be two recipe versions of this delicious spread. This is the easy version. I will have to create another version for people who cannot buy White chocolate spread so easily. I'm sure it can be recreated very easily with some coconut oil, sugar, and good quality melted white chocolate.  But for now, here is what I did. I bought a jar 400 g white chocolate sandwich spread. I scooped it out and put it into the my food processor and started to process it. That's because sandwich spread can get a little hard and I wanted it nice and whipped for when I added in the Oreo cookies. First I started with 4 Oreo cookies. Then I decided two more would do it. Turned out really yummy and very easy. Scooped into clean jar. Now I think this is something that the Oreo cookie people could introduce on the global market. Traditionally people eat pie for Thanksgiving... but I wanted an excuse to make this cake and I didn't want to wait for someone's birthday to roll around... so I made it for Thanksgiving and I'd just like to say I'm thankful  for Kitkat Bars and for M&M's and for cake.  Several years ago I swore that I wouldn't make cake again because it's too much work and it's so difficult to make it look like the pro's make it look... that's why I mainly stick to cinnamon rolls - and cinnamon rolls are better than cake... but I digress. Pumpkin Chocolate Chip Cookies stuffed with Oreo

I use a variation of a recipe from vegweb which is one of my most favorite online vegan/vegetarian recipe sites. Check it out. Anyway, the recipe I use goes something like this: Preheat oven to 350-F (175-C) degrees. Prepare baking sheets with baking parchment paper (makes for real easy clean-up!) In the bowl of a food processor or one of those expensive standing mixers (sure wish I had one) blend together 2 cups brown sugar, 2 cups canned or roasted pumpkin, 1 cup vegetable oil, and 2 teaspoons vanilla. Now the original says to sift together the dry ingredients then to add to the wet mixture... but I'm a lazy cook and I've never had a problem with just adding each ingredient and mixing a little with my mixer/food processor. So, add in 4 cups all-purpose flour, 2 teaspoons baking soda, 2 teaspoons baking powder, 2 teaspoons cinnamon, 1 teaspoon nutmeg, and 1/2 teaspoon ginger . Mix well. Quite some time ago - in 2010 to be precise I did a blogpost about some favorite oatmeal chocolate chip cookies that my brother makes - and they are really good - like really, really good. But, since then I haven't baked cookies in a while - I've been mainly doing healthy stuff and sweet rolls when I get the chance, and every once in a while I do make some oldie but goodies - favorite family recipes - but since going healthier - I like to re-vamp the oldie but goodies using healthier ingredients like 100% organic coconut cooking cream (oil), and honey or apple syrup or raw sugar and less of it than is normally called for in most recipes. And I've been cooking with fresh ground whole wheat and stuff like that. So, yesterday I got in one of the moods and that's what I done! Little Monster Muffins (flour-free)

Muffins says: Eat Me! I used to love baking cookies - and one of my favorite cookies to make was Monster Cookies ... but if you make the original recipe it's loaded with sugar - which is part of the reason why they tasted so dang good. Now I've reduced the sugar and used a sweeter sweetener: honey! And I've got coconut oil instead of butter or margarine. When I first tried this alternative recipe as a cookie - it was a bit crumbly and the bottoms burned. When I tried it as a muffin - it was a success! Maple Chocolate Frosty Ice Cream Paleo/Primal

I don't know why I felt like making ice cream on such a cold day, I just did... and I'm so glad about it, too. But, I'm gonna wait till a warmer day to repeat this delicious concoction! 400ml whipping cream ¾ cup milk ¾ cup grade A 100% real maple syrup ⅛ cup Dutch-processed cocoa powder 2 teaspoons vanilla extract Dash cinnamon 1 small ripe banana, pureed Warm 200ml whipping cream in microwave or on stove top. Mix in cocoa powder till no lumps and smooth. Remove from stove top - do not allow it to boil. Mix in remaining ingredients. Pour into bowl of ice cream maker and follow manufacturer’s instructions. Freeze in airtight container until ready to serve. The consistency of this ice cream is smooth like super soft serve. Freeze for 3 hours to get it to firm but soft consistency. The flavor of this ice cream is oh so yummy - really reminds me of the chocolate frosty from Wendy’s restaurants (fast food) in the U.S. You can taste a hint of the banana but all the flavors...

Paleo/Primal Chocolate Cake

This was my first successful go at baking a Paleo/Primal chocolate cake. I actually set out to make Peanut Butter swirl brownies - a varation of... but the end result from the texture and taste of the "brownies" - it's so cake, spot on. I found a nice looking recipe here , and then had to make some changes based on the ingredients I have and just some changes that I felt were necessary based on my feelings as a baker - and I'm experienced enough to make those changes ... so... mini-chocolate cheesecakes

So, this idea is not original and has been done before - but I just wanted to make some too... they are quite yummy, and I added a top layer of caramel sauce and a pecan to top it off... cutesy, too!  And I love the layers when you cut through it like this - looks like something that takes some time to make - but it's so quick to whip up. So, after making a batch with Oreo's - I decided to make some with mini stroopwafels.... and I'm not sure which I liked better... but I love - love - LOVE stroopwafels... I could eat them everyday... and I have... not lately, though... I'm getting much better at disciplining myself - really I am! I know it doesn't look like much - it doesn't have that layers thing like the Oreo does... but stroopwafels are so very  yummy! So far, I made the above cookies, and I used it to pipe the decoration on the Shamrock Sweet Rolls. I still have a lot leftover. White Chocolate Dipped Sugar Waffles (suikerwafels)

I wanted to make something that was easy to make, fun to make and really delicious... and also something that Mark would like - or at least I hope he will like it. Last week I took stroopwafels and dipped them in dark chocolate and white chocolate and sprinkled them with sprinkles. I wanted to try sugar waffles this time because Mark likes sugar waffles and he doesn't really like stroopwafels. He also likes white chocolate the best. It's also something the kids can help out with - would make a nice FHE treat :)  I got to use my Speculoos hagel , too! To make 'em. The BEST REAL Peanut Butter Cookies

Gooey in the middle and crispy on the outside, just the way a cookie should be! I discovered this recipe some years ago. I used to bake it nearly every month, that's how good it is. I've tried many, many peanut butter cookie recipes and this is the best by far! You don't really need to add chocolate chips... but I just happen to get a bag full of goodies from a lady who bought all these baking supplies - American style baking supplies - from the BX, and the stuff she didn't use up before she moved back to the U.S. - was gifted to me. So the best way to show my gratitude - was to use it up! There was a half open bag of white chocolate chips and a half open bag of semi-sweet chocolate chips... Did I mention... Double Dipped Stroopwafels (Syrup Waffles)

  I couldn't think of a better way to use an old egg carton then to have it hold yummy delicious double dipped stroopwafels. The idea is not really so new. Just a few months ago I saw Kristan from Confessions of a Cookbook Queen do the same thing with graham crackers for a quick holiday treat. The stroopwafel is not really equavalent to a graham cracker though... it is so much better. It's really one of the best cookies to come out of the Netherlands. You can find them everywhere here. Every grocery store carries them in many different price ranges. And there is a difference. That "E" brand that is really cheap - really sucks . The brand from the Lidl is a great price and one of the best tasting ones I've found. They have them made with real butter or with glucose-syrup.
